MEETING OF THE SLOW FOOD CENTRAL EUROPE PROJECT STAKEHOLDERS

On Wednesday, 18 September, at the premises of the City of Dubrovnik Development Agency (DURA), a meeting took place with the stakeholders of the project Slow Food Central Europe: Culture, Heritage, Identity and Food which deals with the valorisation of the intangible gastro-cultural heritage of the Dubrovnik region.

The Slow Food Central Europe project is entering into its third, final year of realization and in Dubrovnik it provides for the organization of a pilot action, a multimedia exhibition entitled “City Breadwinners”. With this specifically conceived exhibition, the DURA and the Association Kinookus, in cooperation with the Dubrovnik Natural History Museum, aim to direct the attention of the local authorities and the citizens to the people who, despite great difficulties, still nurture the traditional ways of food production and preparation, as well as the great potential of sustainable valorisation of the extremely abundant, but still rather hidden gastro-cultural heritage of Dubrovnik and its surroundings. The preparation of the exhibition, to be held in November this year, was a chance to meet the project stakeholders, important actors within the local food system – farmers, artisans, entrepreneurs, experts, representatives of the city and the county authorities and civil organizations – in order to present to them the progress of the project and its achievements to date.

The attendees were greeted on behalf of the City of Dubrovnik Development Agency by Kristina Vujanović, a project manager, followed by Ivo Kara-Pešić from the Association Kinookus, who reminded the stakeholders of the history of the project origins and the phases it has gone through: from the desk and field research, the training and the development of the pilot action, to the transnational model for the valorisation of the intangible gastro-cultural heritage, and a guide for travellers who wish to visit Dubrovnik, respecting the Slow Food principles.

As a positive example of intangible cultural heritage valorisation, in the form of an edible souvenir, Kara-Pešić mentioned a project by the Dubrovnik entrepreneur and restaurateur Nikolina Farčić, entitled Orlando – Dubrovnik Cubit of Chocolate. Farčić explained to the attendees how she came up with the idea of transforming the old Ragusan unit of length, the Orlando cubit, into an original souvenir that connects local history and the symbol of Dubrovnik sovereignty with gastronomy, and exactly on the 600th anniversary of erecting the Orlando’s Column in Dubrovnik. As her motive, she stated the resistance to Chinese souvenirs which have flooded the Old City, as well as the desire to provide the buyers with a constant memory of the uniqueness of the place they visited, by marking the length of Orlando’s right elbow – 51.20 cm – on the box of chocolates.

After the presentation, the stakeholders engaged in a lively discussion on how to create a space for traditional products and original souvenirs on Stradun, the most significant street and the showcase of Dubrovnik and Croatia, and whether and to what extent it is possible to connect all the actors into a functional and economically sustainable system.

The project

The SLOW FOOD - CE project has created a transferable model that can give traditional foods their true value, through knowledge of their producers, plant varieties, animal breeds, traditional processing techniques, folklore, cultural landscape, enhancing the common food heritage of Central Europe, and led to a new alliance between five cities: Venice, Dubrovnik, Brno, Kecskemét and Krakow. Its main goal is to improve the capacities of local actors to valorise the intangible heritage of food in a vision that integrates economic, environmental and social sustainability. The five cities involved are considered as a perfect laboratory for the development of the “new-gastronomy” concept promoted by Slow Food: a multidisciplinary approach to food that recognizes the strong connections between plate, planet, and people.
